Ammonium bicarbonate is a white crystalline powder with a faint ammonia odor. It is soluble in water but decomposes at temperatures above 36°C, releasing ammonia, CO₂, and water. It acts as a leavening agent in baking and a pH buffer in industries. It should be stored in cool, dry conditions to prevent premature decomposition.

Ammonium bicarbonate is primarily used as a leavening agent in baked goods (e.g., cookies, crackers) due to its decomposition into gases. It also serves as a fertilizer nitrogen source, a fire retardant, and a pH regulator in pharmaceuticals and textiles. In food (E503), it avoids metallic aftertastes compared to baking soda. However, it leaves an ammonia smell, making it unsuitable for moist products. Industrial uses include dye production and ceramic glazing. Safe handling is essential to avoid inhalation of ammonia fumes. Dosage depends on application, typically 1–2% in baking.

4. Package and Storage

Ammonium bicarbonate is packed in 25/50 kg polyethylene-lined woven bags or fibre drums to prevent moisture absorption. Small quantities use sealed HDPE bags. Store in a cool, dry, well-ventilated area below 25°C, away from heat and humidity. Avoid contact with acids to prevent rapid decomposition. Shelf life is 12–24 months if stored properly. Keep containers tightly closed to minimize ammonia release. For industrial bulk storage, use airtight silos with desiccants. Decomposed product (strong ammonia smell) should be discarded. Transport as non-hazardous goods but ensure ventilation.
