【Alias】
SHMP; Sodium Polymetaphosphate
【Molecular Formula】(NaPO₃)₆
【Structural Formula】
1. Product Property
Sodium hexametaphosphate (food grade) is a white, amorphous powder or granule. It’s highly soluble in water, forming a slightly alkaline solution. It has strong chelating ability for metal ions, can disperse and emulsify substances, and shows good stability in normal storage, with low hygroscopicity.
2. Quality Standards

pH (1% aqueous solution) | 6.5 – 7.5 |
Water Insoluble Matter | ≤ 0.1% |
Fluoride (F) | ≤ 50 mg/kg |
Lead (Pb) | ≤ 4.0 mg/kg |
Arsenic (As) | ≤ 3.0 mg/kg |
Heavy Metals (as Pb) | ≤ 10.0 mg/kg |
Loss on Drying | ≤ 0.5% |
3. Application Scope and Usage
Sodium hexametaphosphate is extensively used in the food industry as a water-retention agent, emulsifier, and pH regulator. It improves texture and moisture retention in meat products (e.g., ham, sausages) and prevents fat oxidation. In beverages, it enhances viscosity and stabilizes vitamin C. It also acts as a clarifying agent in beer and a stabilizer in dairy products. Additionally, it is applied in canned foods, sauces, and baked goods to extend shelf life and maintain quality. Usage levels typically range from 0.1% to 0.5%, depending on the application。
4. Package and Storage
Food-grade SHMP is commonly packed in 25 kg polyethylene-lined woven bags or sealed HDPE containers to prevent moisture absorption. Storage should be in a cool, dry, and well-ventilated area, away from direct sunlight and humidity. The product is hygroscopic and may clump if exposed to air. Shelf life is 24 months under optimal conditions. Transport as a non-hazardous material, but ensure containers are intact to avoid leaks. Workers should use gloves and masks when handling to prevent irritation。
