γ-Dodecanol is a type of lactone food additive. At room temperature, it is a colorless to pale yellow liquid with the aroma of cream, peach, and pear-like fruits. Its boiling point is 131℃ (200 kPa).

3- نطاق التطبيق والاستخدام
γ-Dodecalactone (a food additive, FEMA 2400) is mainly used to blend rich flavors such as cream, peach, and coconut. It is specifically applied to high-end dairy products (such as butter and cheese), desserts (such as mousse and ice cream), high-end candies (such as chocolate and toffees), and alcoholic beverages (such as flavored liqueurs).
4- العبوة والتخزين
The γ-dodecanol is packaged in a 5kg stainless steel vacuum tank (filled with nitrogen) or a brown glass bottle, with a food-grade inner lining of an inert membrane. It should be stored under strict cold chain conditions (2-8℃) in a dark place. After opening, it needs to be nitrogen-filled immediately and used within 2 weeks. The shelf life is 12 months (unopened).
