Food-grade ammonium dihydrogen phosphate is a white crystalline powder with good solubility in water but insolubility in organic solvents. It exhibits acidic properties (pH 4.4-4.8 in 1% solution) and decomposes at 190°C. The compound is stable under normal conditions but may lose ammonia when heated. It serves as an effective pH regulator and nutrient source in food applications.
