Le nitrite de sodium se pr\u00e9sente sous la forme d'une poudre ou de granul\u00e9s cristallins blancs \u00e0 jaun\u00e2tres, inodores avec un go\u00fbt l\u00e9g\u00e8rement sal\u00e9. Il est tr\u00e8s soluble dans l'eau (82g\/100mL \u00e0 20\u00b0C) et dans l'ammoniaque liquide, faiblement soluble dans l'\u00e9thanol\/m\u00e9thanol. Sa solution aqueuse est alcaline (pH~9). Se d\u00e9compose thermiquement \u00e0 320\u00b0C, lib\u00e9rant des oxydes d'azote toxiques. S'oxyde progressivement \u00e0 l'air pour former du nitrate de sodium.<\/p>\n

3. Champ d'application et utilisation<\/b><\/strong><\/h4>\n

Le nitrite de sodium a un large \u00e9ventail d'utilisations. En tant qu'additif alimentaire, le nitrite de sodium (NaNO2) a pour fonction d'inhiber les bact\u00e9ries, de d\u00e9velopper la couleur, de lutter contre l'oxydation et d'am\u00e9liorer la saveur, et il est largement utilis\u00e9 dans la conservation des produits carn\u00e9s. En plus d'\u00eatre utilis\u00e9 comme conservateur alimentaire, c'est aussi un excellent fixateur de couleur et un exhausteur de go\u00fbt pour les produits carn\u00e9s, particuli\u00e8rement utilis\u00e9 dans l'industrie de la salaison. Le nitrite de sodium peut \u00e9galement \u00eatre utilis\u00e9 comme agent anticorrosion dans l'industrie de fabrication de produits en acier et comme coagulant dans l'industrie de la construction. Le nitrite de sodium est \u00e9galement un inhibiteur de corrosion anodique et est largement utilis\u00e9 dans l'industrie des machines. Le nitrite de sodium r\u00e9agit avec la surface du m\u00e9tal pour former un film d'oxyde dense. Cette couche protectrice emp\u00eache l'ionisation de la couche m\u00e9tallique interne et supprime la r\u00e9action anodique \u00e9lectrochimique, ralentissant ainsi la corrosion \u00e9lectrochimique du m\u00e9tal.<\/p>\n

Conditionn\u00e9 dans des sacs tiss\u00e9s de 25 kg en poly\u00e9thyl\u00e8ne ou dans des f\u00fbts en fer de 50 kg. Stocker dans des endroits frais (<25\u00b0C), secs et ventil\u00e9s, \u00e0 l'\u00e9cart des acides, des produits inflammables et des r\u00e9ducteurs. Dur\u00e9e de conservation : 24 mois.
