Le 1,2-pentanediol (PG), \u00e9galement connu sous le nom d'alcool monopropylique et de 1,2-dihydroxypropane, est un compos\u00e9 organique de petite taille dont la formule chimique est C3H8O2. Le propyl\u00e8ne glycol de qualit\u00e9 alimentaire est un liquide visqueux incolore, transparent et non pr\u00e9cipitant. Il est largement utilis\u00e9 dans l'industrie alimentaire. Selon les normes nationales, il est approuv\u00e9 comme additif alimentaire et est principalement utilis\u00e9 comme stabilisateur, \u00e9mulsifiant et solvant. On le trouve couramment dans des produits tels que le pain et la cr\u00e8me. Le propyl\u00e8ne glycol poss\u00e8de de bonnes propri\u00e9t\u00e9s hygroscopiques et antigel, ce qui permet de maintenir l'humidit\u00e9 et la fra\u00eecheur des aliments. En outre, il peut \u00e9galement \u00eatre utilis\u00e9 dans le traitement de la bi\u00e8re et l'extraction de substances aromatiques.<\/p>\n
