DL-Lactic acid

【CAS】598-82-3  Molecular formula:  C3H6O3   Relative molecular mass:90.0705

Structural formula:

一.Product Property:

Soft acidity: Lactic acid has a mild acidic taste and is suitable for seasoning.

Antimicrobial effect: It can effectively inhibit the growth of pathogenic microorganisms and extend the shelf life of food.

Water solubility: Lactic acid is easily soluble in water and can be mixed with water, ethanol, etc. freely, making it convenient to use.

三.Application scope and Usage:

Food Industry: Lactic acid is widely used in foods such as meat, beverages, wine-making, candies, and bread, as it can regulate pH levels, enhance flavor, and extend shelf life.

Dairy Products: As a natural ingredient, lactic acid is widely used in yogurt, cheese, and ice cream, enhancing flavor and antimicrobial properties.

Meat Products: Derivatives such as sodium lactate and potassium lactate are used in meat processing, which can absorb moisture and inhibit the growth of spoilage bacteria. Beverage: Among fruit juices and soft drinks, lactic acid serves as an acidulant, enhancing the taste and maintaining the stability of the product.

四.Package and Storage:

Lactic acid is typically packaged in high-density polyethylene (HDPE) drums,25kg/barrel , stainless steel containers, or food-grade plastic IBC totes to prevent corrosion and contamination. The packaging must be tightly sealed to avoid moisture absorption and oxidation.

For storage, lactic acid should be kept in a cool, dry, well-ventilated area away from direct sunlight, heat sources, and incompatible materials (e.g., strong oxidizers).
