Colorless liquid, slightly oily in texture. It has a coconut aroma and a sweet taste similar to malt and caramel. Boiling point 151℃, flash point 50℃. Miscible with ethanol and most non-volatile oils, but extremely insoluble in water.

3.Application scope and Usage
γ-Heptalactone (as a food additive, FEMA 2539) is mainly used to blend flavors such as caramel, nuts, and cream. It is suitable for use in baked goods (bread, cookies), dairy products (butter, cheese), candies (toffees, chocolates), and coffee flavor enhancers.
4.Package and Storage
γ-Heptanone is packaged in 25kg aluminum drums or brown glass bottles (protected by nitrogen). It is lined with food-grade PE film. It should be stored in a cool, dark place (< 25℃), and sealed tightly to prevent oxidation. The shelf life is 24 months. After opening, it is recommended to be used within 6 months.
