SODIUM TRIPOLYPHOSPHATE FOOD GRADE

Molecular Formula:Na5P3O10

Molecular Weight: 367 .86

CAS NO.:7758-29-4

【Structural Formula】

1. Product Property

Food-grade sodium tripolyphosphate is a white crystalline powder or granular solid, highly soluble in water, with a slightly alkaline pH (9.2–10.0 in 1% solution). It has strong chelating properties for metal ions like calcium and magnesium, making it effective in water softening and emulsification. It melts at 622°C and decomposes upon heating, releasing phosphates. The compound is hygroscopic and should be stored in dry conditions to prevent caking. It is non-toxic and widely used in food processing as a stabilizer and moisture-retention agent

2. Quality Standards

Parameter Specification (Food Grade)
Assay (Na₅P₃O₁₀) ≥ 85.0%–95.0%
Total Phosphate (P₂O₅) 56.0%–58.0%
Water Insolubles ≤ 0.1%
pH (1% solution) 9.2–10.0
Heavy Metals (Pb) ≤ 10 mg/kg
Lead (Pb) ≤ 2–4 mg/kg
Arsenic (As) ≤ 3 mg/kg
Fluoride (F) ≤ 20–50 mg/kg
Moisture ≤ 0.2%

3. Application scope and Usage

In food industry, it serves as a quality improver. Used in meat products to retain water, maintain texture and juiciness. In seafood, it prevents discoloration. Applied in flour – based products to enhance elasticity and toughness. Also functions as an emulsifier in dairy and beverage products, with typical usage levels ranging from 0.1% – 0.5% depending on food type, following relevant food additive regulations.

4. Package and Storage

Packed in polyethylene – lined plastic woven bags or paper bags, with net weights like 25kg or 50kg. Store in a cool, dry, well – ventilated warehouse. Avoid moisture, direct sunlight and contact with acids. Keep sealed to prevent caking and quality deterioration. Shelf life is about 24 months under proper storage conditions.
