1、Product Property
It appears as white to slightly yellowish crystals or crystalline powder, with an aroma similar to that of vanilla beans. It has a slightly sweet taste, a melting point of 81 to 83 degrees Celsius, and a boiling point of 284 to 285 degrees Celsius. Vanillin is readily soluble in ethanol, ether, chloroform, glacial acetic acid and hot volatile oils, and soluble in water and glycerol. It is unstable to light and gradually oxidizes in the air. It is prone to discoloration when exposed to alkali.

3. Application Scope and Usage
Vanillin is also an important edible flavoring. As a foundation flavoring, it is used in almost all types of fragrances and is widely applied in the food industry. As a food flavoring, it is extensively used in bread, cream, ice cream, brandy, etc. The addition amount in pastries and biscuits is 0.01 to 0.04%, and in candies, it is 0.02 to 0.08%. It is one of the most widely used spices in baked goods and can be used in chocolate, cookies, cakes, puddings and ice cream. Dissolve it in warm water before use for better results. The maximum usage amount for baked goods is 220mg/kg, and for chocolate, it is 970mg/kg. It is widely used in cosmetic fragrances as a fixative, harmonizer and conditioner. It is also an important flavor enhancer for beverages and foods. It is also used in the production of medicines such as L-dopa and methyldopa. It can also be used as a brightener for nickel and chromium metal electroplating
4. Package and Storage
Vanillin should be packaged in food-grade polyethylene bags lined with aluminum foil, typically in 25 kg quantities. For smaller quantities, double-layered plastic containers with tight lids are recommended. Store in a cool, dry place below 25°C, protected from light and moisture. Under proper storage conditions, the shelf life is 24 months. The material should be kept away from strong oxidizers and heat sources. Appropriate ventilation is required in storage areas to prevent dust accumulation.
