1、Product Property
Sodium isoascorbate is a white to yellowish-white crystalline granule or powder, odorless, with a slightly salty taste. It decomposes above 200℃ and is quite stable when exposed to air in a dry state. However, in water-soluble Chemicalbook solution, oxidation occurs when there is air, metal, heat or light. It is readily soluble in water at 55g/100ml and almost insoluble in ethanol. The PH value of a 2% aqueous solution is 6.5-8.0.

3、Application scope and Usage
Sodium erythorbate is widely used as a food antioxidant in meat (0.5 g/kg), canned goods (1.0 g/kg), and beverages (0.15 g/kg) to prevent oxidation, retain color, and inhibit nitrosamine formation38. In beverages (juices, beer, wine), it prevents browning and off-flavors. For frozen seafood, it’s applied via 0.1–0.6% dips pre-freezing. It also aids bakery products (0.2 g/kg) and cosmetics (≤1.5% in skincare) as an antioxidant6. Unlike vitamin C, it lacks vitamin activity but converts to VC in vivo without blocking absorption。
4、Package and Storage
Packed in 25 kg polyethylene-lined bags or fiber drums to avoid moisture. Small quantities use sealed HDPE/Al-foil bags510. Store in a cool, dry, dark place (<25°C, humidity <60%) away from metals and oxidizing agents. Shelf life is 24 months if unopened39. For transport, avoid heat and direct sunlight. Decomposed products (yellowing/ammonia odor) should be discarded. Industrial bulk storage requires nitrogen-flushed containers to minimize oxidation.
