【CAS】4075-81-4 Molecular formula: 2(C3H6O2)·Ca
Relative molecular mass:186.22
Structural formula:
一.Product Property:
Calcium propionate is a white, lightweight flake crystal or white powder, odorless or slightly having the smell of propionic acid. It is stable in heat and light environments. It is prone to deliquescence when exposed to air, soluble in water, slightly soluble in ethanol and ether, and almost insoluble in benzene and acetone. Calcium propionate generates free propionic acid in products, which has a strong inhibitory effect on Aspergillus niger, aerobic spore-forming bacteria, and certain specific bacteria. It can be widely used in grains, bread, cakes, mooncakes, mooncake fillings, vinegar, soy sauce, bean products, and spicy foods to extend the shelf life of the products.

三.Application scope and Usage:
Food-grade calcium propionate (E282) is an efficient and safe food preservative, with extensive applications in the food industry. It is mainly used in the baking food sector, including the preservation and freshness enhancement of baked goods such as bread, cakes, and mooncakes. It can effectively inhibit the growth of molds, yeasts, and certain bacteria, significantly extending the shelf life of the products. In dairy product processing, calcium propionate is often used for mold prevention in cheese and other products. Additionally, it is also used for the preservation and freshness enhancement of seasonings, soy products, meat products, and other foods.
四.Package and Storage:
The product is packed in a double-layer moisture-proof packaging. It is lined with food-grade polyethylene plastic bags and covered with kraft paper bags or paper-plastic composite bags. The common net weight specifications are 25kg per bag. The product should be stored in a dedicated warehouse with a cool and dry environment, maintaining a temperature of 15-25℃ and a relative humidity of no more than 60%. Avoid direct sunlight. When stacking, use pallets, keeping 30cm away from the wall and the ground. The stacking height should not exceed 5 layers and it is strictly prohibited to store together with acidic substances, oxidants, etc.
