1. Product Property
Disodium dihydrogen pyrophosphate is a white crystalline powder or granular material with good water solubility. It functions as an acidulant, buffer, and leavening agent in food applications. The compound is hygroscopic and stable under normal conditions but decomposes upon heating to form sodium polyphosphates. It exhibits chelating properties and reacts with metal ions, making it useful in various industrial processes.

3. Application Scope and Usage
It is used as a rapid fermentation agent, quality improver, leavening agent, buffer, chelating agent, rehydrating agent and adhesive in food processing. The acidic component used in the synthesis of leavening agents for bread, pastries, etc., has a relatively long CO2 production time. It is suitable for melt-baked foods with low moisture content. When compounded with other phosphates, it can be used as a water-retaining agent in the processing of cheese, luncheon meat, ham, meat products and aquatic products, as well as a rehydration agent in instant noodles.
4. Package and Storage
The product is typically packaged in 25 kg polyethylene-lined woven bags or 50 lb multi-wall paper bags with plastic liners. Storage should be in a cool, dry, well-ventilated area away from moisture and incompatible materials. Containers must be kept tightly sealed to prevent absorption of atmospheric moisture. Under proper storage conditions, the shelf life is 24 months. The material should be handled with care to avoid dust formation, and appropriate personal protective equipment should be worn during handling to prevent eye or respiratory irritation.
